what's for dinner...

I think my 12 year old asks me every day, early in the day, "What's for Dinner?"  Sometimes it drives me a bit bonkers, especially when I know she is such a picky eater. 

This week, here is what the Bunting Nest served up:

Sunday: Chicken Tortilla Casserole  ---this one was the best I've ever made (and I've made several versions!)...it's from the Cooks Illustrated Magazine Editor's 30 minute Meal Cookbook....Fabulous!  Of course, it took more like an hour to make, then bake for 20 ish minutes, but is was heavenly.

Monday: Date night (Kids ate leftovers)
Tuesday: Hearty Lasagna Soup, Salad, Bread
Wednesday: Soup and Salad Leftovers
Thursday:  we were treated to dinner out by our guest!  Sirloin tips, Loaded Baked Potato, and salad.
Friday: White House Chicken, baby broccoli  (recipe from my Bahamas friend, Heidi)

Lunches are usually sandwiches: pb&J, tuna salad, bacon,egg, and cheese, or quesadillas.

Breakfasts bounce between cereal, pancakes and bacon, and on Fridays we're treated to our free stash of Panera bagels and other bakery goodies that we have access to!

Some of my favorite recipes have evolved over my 17 years of cooking.  It's really only been the last 5 years that I've begun feeling the freedom to take a recipe and mess with it.  These usually turn out better than the original!

Some of my favorites are:

  •  Honey Ginger Chicken ...1/3 cup each of soy sauce, chili sauce, and honey, ginger, basted on oven fried chicken that's been dredged in a flour/ginger coating
  •  Chicken with Rosemary (crockpot) white wine, broth, lemon zest, rosemary, and fresh tomato...yum.
  •  Beefstew and homemade bread...we prefer our stew with lots of potatoes, a little carrot and some green    pepper.  The Bread is breadmaker...either French or Garlic and Herb
  •  Sicilian Casserole  (baked macaroni in a cream cheese/sour cream sauce topped with a from scratch tomato sauce)
  •  Chicken Enchiladas
  •  Three Pepper Chicken (kind of like a chicken Scampi)
  •  Swiss Steak...stewed tomatoes, green pepperm, garlic, and a tad of onion simmered with the meat that's been dredged and browned in a little olive oil)  serve over rice.
  • Savory chicken pie (Pampered Chef...think bacon, swiss and a little scallion baked with chicken in a crust)
  • Potato soup (again...bacon, cheese, potato, a little carrot shredded)
  • Keith's Chicken Marsala and garlic mashed potatoes... Must pour the mushroom/wine sauce over it all!  Yum.
